About this deal

I love the elegant faint rose hue that bitters like Peychaud's give to a drink made with clear spirits (like the classic Pink Gin cocktail). My bottle would hold 350mls of gin, so allowing for a little bit of wastage during the straining process, and me having a little taste, I measured out 380mls of gin and poured it into a large sterilised jar. Use our easy infusing method and step-by-step instructions to create summery berry tipples, delicate floral drinks and stunning seasonal sippers. A brushing of lemon juice will not only slow up the inevitable, but actually has something to offer in terms of flavour.

It has prominent flavours of peaches and apricots with coriander and lemon zest making a notable appearance before ending with a long, fruity finish.

As a culinary marriage, it sits alongside our own of a wedge of Wensleydale with a slice of fruitcake or the rare and wonderful combination (at least in my neck of the woods) of Lancashire cheese and eccles cake. This week I stewed a couple of them slowly with sugar and lemon, then tucked roughly torn pieces of panettone among them to give a warming winter pudding.

Place a large heavy-based cooking pot over a low heat and tip in the cubed quince, the caster sugar, 250ml of water and the remaining half of the lemon. There is a temptation to leave them in a bowl on the kitchen table, their soft roses ’n’ honey scent getting more pronounced as the room warms.Bake for 30 minutes or till the surface is crisp but still pale gold, perhaps a little toasted here and there. I like the idea of making a tiny parcel of blue cheese, wrapping it in pastry and serving it with membrillo, as quince paste is known, on the side. Buoyed on by my gin making triumph, and somewhat overwhelmed by a glut of quinces, I decided to try my hand at making some Quince Gin. Adnams Limited Edition Quince Gin is made from grain to glass using a distillery wash of 100% East Anglian malted barley. A taste for adventure and discovery runs through all eight generations of the Whitley Neill family tree.

Try adding a vanilla pod into the mix if you have a sweet tooth, or crystallised ginger for a classic flavour combination. I liked Whitley Neill Quince Gin in a Gin and Tonic, but I did find it a touch too sweet if using a tonic water like Schweppes for example.We combine this with quince juice which adds its fragrant tropical aromas and fruity flavours, while still maintaining the character of a true gin.

Choose your flavours: Gin traditionally contains juniper, coriander and cardamom among its spices, so choose a flavour to complement the natural elements of mother's ruin. I’ve used 50ml of this ‘liqueur’ mixed with lemonade and ice and it’s fabulous and with a very gentle pink tinge. It will only improve over time so consider making one this year to drink the next, or give away as a gift. Lots of quince— its has some hints of Honeycrisp apple, round soft notes of canned Bartlett pear and a spiced juniper note.
